This is so incredibly easy that it’s a little embarrassing to post it as a “recipe.” But it is easy, yummy, healthy, AND my kids REQUEST that I make it so it’s a big win for this momma and I hope it will be for you too! 🙂
As an added bonus it’s only 400 calories per pizza!
Pesto Broccoli Pizza
Ingredients are per pizza
- 1 whole wheat Greet pita flat bread
- 1 tbsp pesto sauce – I prefer using home-made (I usually make a large batch and freeze in small batches to pull out whenever I need it) but you could use store bought too.
- 1 cup (approximately) chopped broccoli florets, steamed (you could even use leftover broccoli)
- 1/4 cup part-skim, grated, mozzarella cheese
- salt
Preheat the oven to 400*F.
Place the pita bread on a pizza pan and warm in the oven for 3-5 minutes.
Remove pita bread from the oven and spread the pesto sauce evenly over the bread, then spread the broccoli evenly over the pizza. Sprinkle very lightly with a little salt.Top with cheese:
Pop in the oven for 5-7 minutes until the cheese is nice and melted. Turn on the broiler and move the pizza to the top rack. Broil for 1-2 minutes until the cheese is bubbly. Slice and serve.
