These are a new favorite in our house. They came about when I saw a picture on pinterest that reminded me of the eggplant fritters my dad makes. Trinity has already requested to make those with my dad this summer and write a post on her own blog about them. It seems I will have competition for our favorite family recipes now! 🙂 Seeing as how those two love making (and eating!) them together, that will be fitting. But in the mean time, these banana fritters are easy, healthy, yummy, and our little monkeys go bananas for them. (Sorry!! I couldn’t pass up the opportunity for a really bad pun.)
The first time I made them I tried a base recipe with only three ingredients. After that I doctored them up a little bit. Either way they are yummy, so make them whichever way you like or have time for. 🙂
Banana Fritters – makes 16 fritters (about 3 inch diameter)
- 2 ripe bananas
- 2 large eggs, lightly beaten
- 2 Tbsp whole wheat flour
To this base you can add any or all of the following:
- 1/2 tsp cinnamon
- 3 tsp maple syrup
- 2 Tbsp rolled oats
- 1/2 tsp vanilla
- for extra fun you could add mini chocolate chips!
Mash the bananas thoroughly. Add eggs and flour and stir until combined. Add your chosen add-ins and stir until combined.
Lightly spray a griddle pan with cooking spray and heat to just below medium. When heated, pour the banana batter into the pan making fritters about 3 inches in diameter. When they start to look dry around the edges, flip to cook the other side.
